Pumpkin White Bean Chili

Skinny taste shared a Turkey Pumpkin White Bean Chili and I wanted to share my twist on her recipe. Here is a link to her recipe if you are interested!

I have been in the mood for a good chili since fall has arrived and this recipe caught my eye because of the low weight watcher points and I had all the ingredients!

Since we are hog farmers and also raise dairy steers, I tend to not use ground chicken or ground turkey. In this recipe I used ground beef that we raised! I love being able to have meat in our freezer that we raised on our family farm.

I make almost every single soup, chili, stew, etc..... in this beautiful Pioneer Woman Dutch Oven.

I have had the dutch oven for nearly 4 years and it is still in perfect condition! Highly recommend you check it out!

Pumpkin White Bean Chili

1 pound ground beef

1 large onion

4 tsp minced garlic

2 tbsp cumin

2 tsp chili powder

3 tsp oregano

15 oz can of pure pumpkin

2 15oz can of Navy beans (I rinsed and drained them)

7 oz can of green chilies

2 cups chicken broth


1. Brown ground beef with chopped onion, minced garlic and cumin. Once brown, add in chili powder, oregano. Let cook for 2 minutes to incorporate seasoning

2. Drain and rinse both cans of navy beans. Once complete, add the beans to the dutch oven. Add in the green chilies, pumpkin, and chicken broth.

3. Allow to simmer fo 25 minutes on low heat.

4. Feel free to add sour cream or fat free greek yogurt on top when you serve!

I used my weight watchers app to develop the recipe. With the recipe serving 8, each serving came to 3 smart points. If you were to use ground turkey or ground chicken, the recipe would be 0 smart points!
