Corn Bake

With Easter coming up this weekend, I have been looking at what I will bring to each family get together.

It seems most holidays include a dish to pass and I have found some of my favorites. Before I found some of my favorites, let me tell you, I also found some of my least favorite dishes:)

During Thanksgiving this year, my sister brought this corn dish and I feel in love.

As kids we always had scalloped corn... you have heard of that right? Maybe it is just a Minnesota thing?

Anyways...this corn dish is a spin off of that but a bit healthier! The original recipe called for sour cream but since I am following weight watchers, I decided to replace it with fat free greek yogurt and you couldn't taste a difference!

Corn Dish

1 can whole kernel corn drained (15.25 ounce can)

1 can creamed corn (15.25 ounce can)

1 Jiffy Corn muffin mix (8 ounces)

1 cup fat free greek yogurt

4 tablespoons butter Melted

1.5 cups shredded cheddar cheese

Mix all the ingredients together in a separate bowl. spray the baking dish with pam spray. Put ingredients into baking dish and top with a little extra cheese.

bake at 350 degrees for 55 minutes or so!
